Ingredients

- 1 pkg regular sausage (not links)
1 container egg-beaters
1 pkg (large) frozen hash browns
2 cups shredded cheese
Salsa
Preparation Instructions

- Heat oven to 425.
- Spray 9x12 or equivalent cooking container with non-stick spray.
- Brown sausage well & drain off fat.
- Put aside 1/2 cup cheese
- Place one layer of potatoes in pan followed by one layer of sausage & one layer of cheese.
- Continue layering until all sausage, hash browns & 1 1/2 cups of cheese have been used.
- Pour container of egg-beaters over contents of pan & shake to settle.
- Bake covered with foil for around 45 minutes or until well set.
- Remove foil, top with salsa to taste & remaining cheese.
- Place back in oven & cook until cheese is melted (5-10 minutes)
- Let stand for 10 minutes
